Today, March 1st, is National Peanut Butter Lovers Day! And, what better way to celebrate such a fun day, than with this very delicious Homemade Peanut Butter Cupcake recipe!

First, we will start with making homemade Peanut Butter. It’s so simple and easy! We recommend making it in a food processor if you have one, but a blender, would also work. You can use any oil you prefer – peanut oil, olive oil, vegetable oil – but we’ve found that organic extra virgin coconut oil works best for the texture and flavor.

Homemade Peanut Butter Ingredients:

2 cups (16 ounces) raw, shelled, unsalted Peanuts
1/2 teaspoon Kosher Salt, plus more to taste
1-2 tablespoons Organic Extra Virgin Coconut Oil  (melted)
1-2 tablespoons Honey

Peanut Butter Directions:

1) Pulse the peanuts in a food processor for 1 minute continuously. Stop, scrape down the sides and bottom of the bowl. At this point, the processed peanuts will look gritty and dry.

2) Process for 1 additional minute. Running the food processor continuously. Stop and scrape down the sides. At this point, the ground up peanuts will have started clumping together.

3) Pour the organic extra virgin coconut oil in. Process for 1 additional minute. Running the food processor continuously. Add salt, and honey and continue to process for 2 additional minutes. Stop and scrape down the sides of the bowl as necessary.

The longer you process the peanut butter, the smoother it will become. You may want to add a little more oil if you like a creamier texture. (note, adding a little more salt will bring out more of the peanut butter flavor – you’re working with unsalted peanuts, so you can control the amount of salt that’s added). Some people really like sweet peanut butter, so if the honey isn’t enough to give it the sweetness you want, you could also add a few tablespoons of brown sugar.

Next, we’ll move on to the Vanilla Cupcake Recipe.

Vanilla Cupcake Ingredients:

2 cups Flour
1/2 teaspoon Salt
2 teaspoons Baking Powder
1/2 cup Butter, softened
3/4 cup Sugar
2 Eggs
1 cup Milk
1 teaspoon Vanilla Extract
1 cup of the Homemade Peanut Butter you just made!

Cupcake Directions:

1) Preheat oven to 350 degrees F. Prepare your My Baker’s Dozen Silicone Baking Cups by lightly spraying them with cooking spray.

2) Cream butter and sugar till light and fluffy, beat in eggs one at a time. Add homemade peanut butter to mixture.

3) Add flour (mixed with baking powder and salt) alternating with milk, beat well; stir in vanilla.

4) Divide evenly among silicone baking cups and bake for 18 minutes.

5) Let cupcakes completely cool, then hollow out the middles to add peanut butter filling to center

6) Fill middle of cupcakes with homemade peanut butter.

The next part is always my favorite – DECORATING!!!

If you prefer to make your own Milk Chocolate Frosting, here’s the recipe I recommend:

Milk Chocolate Frosting Ingredients:

1 cup unsalted Butter, softened to room temperature
3 1/2 cups Confectioners’ Sugar
1/2 cup unsweetened Cocoa Powder
1/2 teaspoon Salt
2 teaspoons Vanilla Extract
3 tablespoons Heavy Cream

Frosting Directions:

1) Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy – about 2 full minutes.

2) This creates a creamy base for the frosting. Turn speed to LOW and slowly add 3 cups of confectioners’ sugar, the cocoa powder, and salt.

3) Beat until sugar/cocoa are absorbed into the butter, about 2 minutes. Turn mixer to medium speed and add the vanilla and cream. Once added, turn the mixer to high speed and beat for 1 minute.

4) Add the last 1/2 cup of confectioners’ sugar if you’d like to increase the frosting’s thickness.

***Special Note*** for the theme of “Peanut Butter Lovers”, I crumbled up a Butterfinger and used that as the topping, but any topping would be fun. I also had a little extra peanut butter left, so I added that to the chocolate frosting to get a nice marbled chocolate and peanut butter look to some of the cupcakes. Don’t be afraid to get creative!
